We ask Dr Paul Cluver, of Paul Cluver Wines, his definition of conservation and sustainability in the world of wine. He talks through their projects with Cape Nature conservation, protecting conservation areas and corridors on the farm, which allows for a large flora and fauna biodiversity. Dr Cluver also talks more about their soil programs, to sustain life at the smallest level, feeding and nurturing their ancient soils. All of these programs not only have a positive impact on the environment, but lead to more complex and interesting wines. Nature and wine in balance!
